Cakey Fudgey Brownie Goodness!

I love baking, and so when Luke told me he really fancied cakey gooey brownies,  I got baking!
This recipe is literally so simple and takes all of ten minutes to whip up. I decided to add delicious Rolo's to mine, but you can literally add whatever you want, walnuts, raisins, etc.
You will need a tin 23cm by 33cm, and make sure you grease it with butter. I like to layer it with parchment paper as its easier to remove your sticky brownies!

Ingredients. 
400g Caster Sugar,
225g Melted butter,
60g Cocoa Powder (I like cadbury's bourneville cocoa powder),
1 tsp vanilla extract,
4 large, beaten eggs,
225g plain flour,
1/2 tsp baking powder,
1/2 tsp salt,
60g Rolos (you can change this as you like).

Method. 

1.) Firstly preheat your oven to 180 degrees Celsius.
2.) Next, cream your caster sugar and butter together. It should be smooth (not grainy) and almost look like whipped cream when fully whipped.
3.) Sieve the cocoa powder in to the mixture, and add the vanilla extract. Mix well throughout.
4.) Next, slowly add your beaten eggs. Do this slowly and mix well.
5.) Sieve the plain flour in to the mixture, and add the baking powder and salt. Mix well through, ensuring to keep as much air in to the mixture as possible.
6.) Spoon the mixture in to your baking tin, and evenly spread your rolo's throughout.

7.) Bake in the oven for between 20-25 minutes. If you dip a skewer in them there should still be a tiny bit of batter on your skewer... this is your gooey-goodness!
However, if you like them slightly more cooked, add another 5 minutes and repeat until happy.
